vary
from
the
common

mushrooms,
sliced

tomatoes,

jalapeno
pepper,

tortilla Add
oil
to
large
skillet,
start
cooking
onions,
slice
the
other
vegetables
and
add
to
onions.
Reduce
heat
to
simmer
and
then
add
seasoning.
Add
1/2-cup
milk
to
eggs
then
scramble
in
melted
butter.
Add
eggs
to
vegetable. Melt
butter
in
saucepan,
remove
from
heat,
add
flour,
and
blend
to
smooth
paste,
add
1/4-cup
milk,
and
blend
until
lumps
are
removed.
Return
to
heat,
add
balance
of
milk,
and
stir
with
whisk
until
milk
starts
to
thicken,
add
cheese,
and
stir
until
cheese
is
melted
into
milk. Heat
tortillas
for
30
sec.
in
microwave,
fill
tortilla
with
egg
mixture,
fold
over
tortilla
and
top
with
1/2
cup
of
cheese
sauce. Prep.
