This fruit dish can be served with breakfast or as a dessert.

 

Serves: 4

 

1/4 c peach preserves

1/8 c lemon juice

1/8 c brandy

1 15.25-oz can sliced peaches, drained

1/8 c coconut, shredded

1 pinch mace

 

Mix ingredients in microwave cookware.

Add the lemon juice & brandy to the preserve. Then break up the preserves.

Add other ingredients then stir to blend.

Cook on high 3 min. in microwave.

 

Prep. Time: 5 min.        Cooking Time: 5 min.

Savory Eggs

A standard at the Inn that always pleases.

 

Serves: 4

 

1/2 c half and half

1 tsp mustard

1/2 c cheddar cheese, shredded

8 each egg

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp seasoning, cook's choice

 

Pre-heat to 350 degrees.

Spray individual ramekins with vegetable oil: divide cheese between ramekins.

Add mustard to milk and stir with whisk.

Add eggs and seasonings, stir with whisk to add air.

The cook’s choice seasoning can vary from the common things like dill, basil, chives, or sage to barbecue, beau monde, fajita, or Cajun.

 

Prep. Time: 5 min.        Cooking Time: 20 min.

Southwest Crepes

This recipe has been changed several times over the years to reach the peak of sensory delights

 

Serves: 6

 

1/8 c vegetable oil

1 each sweet onion, sliced

1 each green bell pepper, sliced

1/2-pound mushrooms, sliced caps

1 14.5-oz can tomatoes, diced

1/8 c pickled jalapeno pepper, chopped

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp seasoned salt

1 tsp Italian seasoning

1 tsp garlic, minced

 

1/8 c butter

6 each large eggs

 

1/8 c butter

1/8 c flour

1 c milk

1 c cheddar cheese, shredded

 

6 each flour tortilla

 

Add oil to large skillet, start cooking onions, slice the other vegetables and add to onions. Reduce heat to simmer and then add seasoning. Add 1/2-cup milk to eggs then scramble in melted butter. Add eggs to vegetable.

 

Melt butter in saucepan, remove from heat, add flour, and blend to smooth paste, add 1/4-cup milk, and blend until lumps are removed. Return to heat, add balance of milk, and stir with whisk until milk starts to thicken, add cheese, and stir until cheese is melted into milk.

 

Heat tortillas for 30 sec. in microwave, fill tortilla with egg mixture, fold over tortilla and top with 1/2 cup of cheese sauce.

 

Prep. Time: 30 min.
